1/2 kg European anchovies
2 eggs
2-3 tbsp. of flour
5-6 scallions
1 tsp. of black pepper
1 tsp. of salt
Fresh mint

Clean the anchovies by cutting off the head and deboning. Rinse thoroughly and sieve. Mince scallions, parsley and mint, and mix them in a pot with eggs and flour. Cut drained anchovies into four pieces. Add them into the mix and keep mixing. Add salt and black pepper. Deep fry using a spoon. Serve with red pepper flakes sprinkled on top.
